Salisbury Steak Dinner – Paleo Style

Paleo Salisbury Steak – Mushroom Gravy with Veggies on the Side

I found this seriously-delicious recipe for Salisbury Steak and Mushroom Gravy on the paleOMG.com website.  Loved it!  I served it up with organic baby carrots (cooked a small amount of water seasoned with ghee and dill) and some organic kale salad that was “massaged” with a bit of salt and organic olive oil.  They were the perfect compliment to the steak!

Take a peek at the original recipe at paleOMG.com.  My version was modified just a bit:

  • 1 lb. Organic, Grass Fed Ground Beef (@$5 at Aldi) – YES! Aldi
  • 1 Cage free Organic Extra Large Brown Eggs (<$1 at Meijer)
  • 1 Organic Garlic Clove, minced (<$1 at Produce Depot)
  • 1/2 Organic Onion, minced  (<$1 at Meijer)
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon Pepper
  • 1/2 teaspoon dried Thyme
Mix up all the ingredients for the steaks (above) into a large mixing bowl and use your hands to mix everything thoroughly. Form the meat into four oval patties. Cook in skillet about 3-5 minutes each side depending how thick you made them and how pink you want them inside.  Remove cooked patties and start the gravy:
  • 2 Tablespoons Organic Coconut Oil (< $1 from Herb Thyme)
  • ¾ cup Organic Beef Broth (@ $1 from Produce Depot)
  • ½ 6oz can Coconut Milk (@ $2 from Produce Depot)
  • 1 lb.  Organic Baby Bella Mushrooms, sliced  (@$4 at Meijer)
  • 1 Organic Garlic Clove, minced (<$1 at Produce Depot)
  • 1/2 Organic Onion, minced  (<$1 at Meijer)
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon Pepper
Add coconut oil, onions, and garlic to the pan and cook over medium-high heat. Let the onions cook until they become translucent. Add the rest of your ingredients including the coconut milk, broth, mushrooms and seasonings.  Mix together and let cook down a bit. Once the onions are beginning to soften, cover the pan and turn the heat down low to let cook, stirring occasionally.

Spaghetti Squash with Bolognese

When that craving for noodles or pasta hits … I find myself a spaghetti squash and am soon satisfied.  It’s a little twist on the traditional family recipe, but I really don’t miss the pasta!!

  • 1/2 Green Bell Peppers – chopped  (@ $1 from Meijer)
  • 1/2 Red Bell Peppers – chopped  (@ $1 from Meijer)
  • 1/2 Organic Onion – chopped (@ $1 from Meijer)
  • 1.25 lb. Organic Ground Bison (@ $12 from Meijer) – or Ground Beef
  • 12 oz. Organic Tomatoes Diced (@ $2 from Meijer)
  • 24 oz. Organic/Non-GMO Pasta Sauce ($7 from Produce Depot)
  • 1 t Sea Salt
  • Black Pepper to taste
  • Italian Seasoning
  • 1 Small Organic Spaghetti Squash – halved and cleaned (@$2 from Produce Depot)

Preheat oven to 350 F.  Prepare baking dish or cookie sheet with parchment paper.  Place squash cut-side down and bake for 1 hour.

While squash is cooking, brown ground beef or bison in a large skillet with peppers and onions.  Continue cooking until  vegetables are soft.  Add tomatoes, pasta sauce and spices.  Simmer on low 30-45 minutes.

When squash is cooled just enough to handle, use a fork to “scrape” the noodles into a serving dish.  Top with warm bolognese sauce.  Season with Italian seasoning and enjoy!

Serve 6 people at approx $5 per serving.

Why organic food?

I realize you might be asking “Just what inspired you to become an all-organic girl?”  Well, first … I viewed a 20 minute story about food allergies that really rang true with me:

And then, I happened upon a documentary called “Genetic Roulette: The Gamble of Our Lives (2012)”.  I first found a short summary on youtube, but it has disappeared 😦

The full movie, however, is definitely worth a watch.   I caught it at a free screening at my local library.  I was amazed by the links to allergies, disease, fertility issues and more … that remain largely unknown by the general public.   You can find information on the full movie at Netflix, or abridged versions (and information on free screenings around the country) on gmoawareness.org or responsibletechnology.org.  Below is a link to AMAZON, where you can purchase the DVD:

In between, I have also watched a number of other documentaries including “KING CORN” (you can view it on YouTube as a trailer or a full length film) and many others that are now available online at “TOP DOCUMENTARY FILMS“.  I encourage you to give them a view.

EYES WIDE OPEN, now!

The real eye opener for me is that Genetically Modified food is hidden in almost all of the foods we “normally” eat and not only are they NOT nutritious, but our bodies cannot process them- and a growing number of people (including me) believe they are toxic. So if you want to eliminate them you have to give up all the “normal” food we eat (pop, chips, bread, crackers, cereal, cereal bars, salad dressings, condiments, cookies etc). And go back to food as it occurs in nature.

Since I found this information, I buy organic meats and eggs and produce … Not much else :). I’m also VERY picky about the oils I choose because there are GMO’s in almost all of them if they are not labeled specifically ORGANIC or NON-GMO.   I have adopted my basics from the paleo plan, and you can view the specifics at http://www.whole9life.com. It’s been quite a journey!

What a difference 24 months can make!

The quest for better health has led me in many different diet-directions over the years.  When it comes to DIETS …  literally, I think I’ve tried them all.  Vegetarian – low fat – no fat – calorie restriction (with many different twists – complete with all the calorie counting and measuring and logging of food) and even a full 6 months eating no-fat-vegan.

I found the Paleo diet/lifestyle mid year in 2012. Since that time I have adapted to a new method of food preparation and eating that I believe has brought *and will continue to bring* good health and much happiness to all who will indulge!    I know I am showing up a little late to the NON-GMO party, but as I began to incorporate strictly organic foods and eliminated pesticides, herbicides, antibiotics and other “foreign” non-foods I found my health improve dramatically.  Immediately.

So … what I am passionate about is CLEAN eating:  My personal RX for almost any ailment is an ORGANIC-PALEO diet.  Of course, you’ll hear more about that later 😉

I am completely convinced that “clean”/organic eating is responsible for my continued improved health – not to mention better energy/better sleep/no food cravings/no swelling & edema/no shortness of breath/no heart palpitations/no allergic symptoms/no cold-hot flashes/no uncontrolled sweating (I will spare you a complete list)  …. and as you might guess, I want to share this great feeling with the world. I had not realized how very sick I had become until I finally surrendered to nutritious eating.

My biggest frustration has been in sourcing good, fresh, organic, nutrient-rich ingredients.  I have found that organic – clean – paleo eating does not have to be complicated or expensive.  I hope I will be able to demystify my newfound love of better health through better food and share some of the wonderful tasty dishes with recipes with this blog …. so more can enjoy the benefits along with me!
